- EnologyVinification and Aging:Crushing and pressing in a vertical hydraulics press. Must decantation at 6ºc for 24h. First fermentation in stainless steel, at controlled temperature (14), with parcial malolactic fermentation in october 2022. Aging for 6 months in second year old french oak barrels, and second fermentation in bottle, over its lees for 12 months. ‘Degorgement’ in January 2024
- Testing NotesNotes:As a result of prolonged fermentation in the bottle, this is a cider with crystalline color and citrus aromas with a fine, crisp bubble and balanced acidity, which gives it a very subtle freshness.
