- EnologyVinification and Aging:Crushing and pressing in a vertical hydraulics press. Must decantation at 8 c for 24h. Co-fermentation of the apples and ‘tinta negra’ grapes in stainless steel, at controlled temperature (14º), with parcial malolactic. Aging for 6 months in second year old french oak barrels, and second fermentation in bottle, over its lees, for 9 months. ‘Degorgement’ in January 2024.
- Testing NotesNotes:As a result of prolonged fermentation in the bottle, this is an amber-colored cider with forest fruits aromas with a fine, crisp bubble and balanced acidity, which gives it a very subtle freshness.
